Ethnic cuisines were previously generalized by a particular ethnic group, such as Chinese, Japanese, Mexican and Italian. Now, consumers expect more authentic flavors focusing on specific regions and dishes. Flavor Profiles

  • Bengali – A curry dish from the eastern regions of India served with fish and seafood. The sauce contains ghee and coconut complimented with a seasoning containing turmeric, citrus, cumin, coriander, fenugreek, bay, ginger, black pepper, capsicum, clove, onion and garlic.
  • Butter Chicken – A classic Indian dish with a sauce containing ghee, tomato puree and yogurt or cream, and seasoned with fenugreek, cumin, cloves, cinnamon, coriander and pepper.
  • Tandoori – The name comes from the clay tandoor oven and originated in the Punjab region of India and Pakistan. The meat (chicken) is marinated in yogurt and seasoned with a blend of coriander, sweet spices and capsicum. Heat range is mild to hot.
  • Vindaloo – A popular dish from Goa, often considered a fiery, spicy dish. Meat is mixed with tomatoes and vinegar, and seasoned with garlic, coriander, turmeric, ginger and capsicum.
