Middle Eastern and African Blends

Global flavors resonate with today’s consumers. Inspired by travel and a desire for adventure, consumers demonstrate continued excitement around well-rounded, full-flavored cuisine.

An increased focus on authentic flavors and dishes has led to demand for specialized retail ready-to-eat meals, soups and appetizers. This has resulted in a need for spice blends that can deliver the authentic taste profile of various flavors and dishes.

Kalsec global culinary skills and expertise in spice and herb extract development were used to create blends that are reminiscent of the aromas and flavors of the region. These blends begin with spice extracts such as allspice, black pepper, capsicum, cardamom, cinnamon, clove, coriander, cumin, nutmeg and turmeric. Certain blends combined with additional spice flavors enhance their own distinguishing characteristics ideal for your application.

Middle Eastern Blends

  • Emirati Bezar:  A popular spice blend in the United Arab Emirates, characterized by fennel, cumin, black pepper and cinnamon with hints of cardamom and coriander.
  • Za’atar: Embodies the thyme, sumac and sesame flavors typical of this standard Middle Eastern spice blend.
  • Syrian: Characterized by warm spices, black pepper, ginger and cardamom, this spice blend is common across the Middle East. Typically used to flavor stews and ground meat mixtures.
  • Turkish Baharat:  A complex blend characterized by warm spices, mint, oregano and bay with hints of fennel, mustard and clove. Baharat means “spice” in Arabic, the Turkish version is distinguishable by the addition of mint.

African Blends

  • Ethiopian Berbere: Earthy notes characterized by paprika, onion and ginger with hints of fenugreek, coriander and nutmeg.
  • Moroccan: Characterized by warm spices, cumin and coriander this spice blend is typically used on chicken, fish and potatoes.
  • North African: Characterized by floral cardamom and warm spices with a touch of pungency from black pepper and cayenne chilis.
  • Harissa: Differentiated by earthy notes of paprika and cumin with garlic, coriander and caraway followed by a mild pungency.

Asian Blends

As ethnic flavors become more popular, the consumer palate is becoming more particular. Ethnic cuisines were previously generalized by a particular ethnic group, such as Chinese, Japanese, Mexican and Italian. Now, consumers expect more authentic flavors focusing on specific regions and dishes. This increased zeal for ethnic flavors, coupled with the demand for specialized retail ready-to-eat meals, soups and appetizers, has resulted in a need for spice blends that can mimic the authentic profile of various flavors and dishes.

  • Tom Yam Spice – A blend of lemongrass, sautéed sweet onion, kaffir lime and other spices to create the recognizable spicy profile found in a typical Thai version of Tom Yam soup.
  • Rendang Spice – A blend of lemongrass, fried shallot, kaffir lime, capsicum and other spices to create the distinctive curry-infused flavor associated with Malaysian Rendang.

  • Satay Spice – A blend of lemongrass, fried shallot, turmeric, garlic and other spices to create the traditional flavor used in an Indonesian satay peanut sauce.

  • Guajillo – An earthy, paprika-like, tobacco flavor with fruity undertones.

  • Carne Adovada – A blend of onion, jalapeno, chipotle, toasted cumin, garlic and Mexican oregano to create the signature flavor associated with this popular new Mexican dish.
  • Chimichurri – A blend of parsley, black pepper, cilantro, oregano and garlic to create the distinctive flavor of a green Argentinean chimichurri sauce.
  • Chorizo – Red and black pepper, cumin, onion, garlic and fennel are blended to create the flavor typical of Mexican chorizo sausage.
  • Salsa Verde – A balanced blend of green jalapeno and cilantro flavor, rounded out with chilies, garlic and onion.

Flavor Profiles

  • Bengali – A curry dish from the eastern regions of India served with fish and seafood. The sauce contains ghee and coconut complimented with a seasoning containing turmeric, citrus, cumin, coriander, fenugreek, bay, ginger, black pepper, capsicum, clove, onion and garlic.
  • Butter Chicken – A classic Indian dish with a sauce containing ghee, tomato puree and yogurt or cream, and seasoned with fenugreek, cumin, cloves, cinnamon, coriander and pepper.
  • Tandoori – The name comes from the clay tandoor oven and originated in the Punjab region of India and Pakistan. The meat (chicken) is marinated in yogurt and seasoned with a blend of coriander, sweet spices and capsicum. Heat range is mild to hot.
  • Vindaloo – A popular dish from Goa, often considered a fiery, spicy dish. Meat is mixed with tomatoes and vinegar, and seasoned with garlic, coriander, turmeric, ginger and capsicum.
