Naturally Extend Shelf Life of Refrigerated Foods
Growth of spoilage microorganisms and pathogens may occur in refrigerated storage due to the presence of cold-loving (psychrotrophic) bacteria.
Deli salads could be contaminated with spoilage microorganisms and pathogens including Listeria monocytogenes. The FDA lists store-prepared deli salads as ready-to-eat foods at risk of contamination of Listeria monocytogenes. Dips are commonly spoiled by lactic acid bacteria negatively impacting the organoleptic properties of these foods (mainly acidic notes).
