New consumer research on food waste, freshness perception, & changing shelf-life expectations.

Consumers care deeply about the food they buy.  They want products that taste great, stay fresh, are safe to eat, and deliver food value. Yet, despite those priorities, food waste continues to rise around the world.

In our newly released e-book, The Shelf-Life Gap: Why Consumers Waste Food Despite Their Best Intentions, we explore the growing disconnect between how long consumers expect food to last and the confidence they have in knowing when it is still good to eat.

What is the shelf-life gap?

The shelf-life gap is the difference between how long consumers expect food to remain fresh and their confidence in knowing when it is still safe and enjoyable to eat.

Shelf-life may not be the primary factor influencing a purchase decision, but once food enter the home, it becomes one of the most important. Consumers consistently evaluate freshness and safety, often relying on expiration dates, smell, appearance, and taste to guide decisions around whether food should be eaten or discarded.

Our global research found:

  • 53% of consumers check expiration dates before purchasing food
  • 55% check expiration dates before eating food
  • 80% say smell is the number one reason they throw food away

The research reveals that food waste is often driven not just by spoilage, but by uncertainty.

Why consumers throw away food

Many consumers want to reduce food waste, but they are often unsure which freshness signals they should trust.  Expiration dates, sensory cues, and product appearance do not always align. When those signals conflict, most consumers choose the safest option.

“When in doubt, it gets thrown out.”

This uncertainty contributes to unnecessary food waste, even when the products may still be safe to consume.

How convenience is changing shelf-life expectations

Convenience continues to reshape how consumers shop, store and use food. -This is creating even greater expectations for products to maintain freshness and quality throughout their intended shelf-life.

Younger consumers are also reshaping expectations around food protection and preservation.

Millennials and Gen Z are more likely to associate food waste with sustainability and environmental responsibility, while also showing growing support for naturally sourced preservation solutions.

For food manufacturers, the challenge is no longer simply extending shelf-life. It’s about building consumer confidence throughout the entire product experience, balancing freshness, safety, taste, and evolving expectations around natural ingredients.
