Color Analysis and Stability Characteristics

Color Analysis
The color value of turmeric oleoresin is measured by spectrophotometric absorbance at 415 to 420 nm in acetone. Color is reported as % curcumin based on E 1%/1cm = 1650 for pure curcumin.

Product Heat Light pH
Micro-crystalline Suspension in Oil Stable in retort and extrusion processing. Typically not stable in light. Turmeric color stability may be enhanced in applications such as spray-dried cheese, boiled sweets, and hard candy. Turmeric Pigments produce their typical brilliant yellow hue at pH of 2.5 to 7.0. At pH greater that 7.0 the pigments take on a red hue and become unstable.
Water Soluble Stable in retort and extrusion processing. Typically not stable in light.
