Varieties
Jalapeno
An extract of the green jalapeno pepper characterized by pungency and green notes generally associated with sweet green bell peppers.

Chipotle
A dried, red jalapeno roasted over mesquite to produce an extract with a distinctive, sharp, smokey flavor and aroma.

Sonora
A sweet chile variety with grassy, chocolate notes. The extract is produced from dried pods of sweet red chile pepper.

Tabasco
An extract with sharp, biting pungency and an acidic background.
