| Selecting a Paprika Extract |
Kalsec® Paprika extracts are produced in specialized forms designed to meet
your exacting requirements. The applications section of this bulletin
provides general information on typical food applications for paprika
extracts. The selection of the most appropriate form of paprika extract
will depend on your food product formulation, packaging, processing, and
stability requirements. The Paprika Color Product Guide provides specific suggestions to help you select the best Kalsec® Paprika product and determine the appropriate usage rate.
Oleoresin Paprika
An oil soluble extract with standardized color
concentration, widely used in processed foods such as sausage, dressings,
dry soluble seasonings, food coatings, and snack food seasonings.
Aquaresin® Paprika
A water and oil dispersible extract consisting of
Oleoresin Paprika with food grade emulsifiers. Aquaresin® Paprika is the
preferred product for emulsion type sauces and dressings, marinades,
injection solutions, and wherever adding paprika to the aqueous phase is
beneficial. For more information on the functional benefits of Aquaresin®
Paprika see the Aquaresins® section.
Durabrite® Paprika
A highly stable form of Oleoresin and Aquaresin®
Paprika. Its superior oxidative stability protects against color and
flavor degradation during processing and storage of food products.
Durabrite® Paprika is highly recommended for batters, breadings, coatings,
snack toppings, sauces, and processed meats. For detailed information on
why Durabrite® Paprika is fast becoming the standard paprika extract
utilized by many quality-minded food processors see the Durabrite® Paprika section.
