1. How are Oleoresin and Aquaresin® Paprika produced?
The process begins with high quality, pigment rich, fresh paprika pods.
They are washed, carefully dehydrated, and ground to a fine mesh size to
improve extraction of the pigments. The ground paprika is extracted from
the cellular mass and concentrated to a liquid oleoresin raw material which
is later standardized with soybean oil or canola oil. Aquaresins® are made
water and oil dispersible by the addition of mono- and diglycerides and
lecithin.
2. What is Durabrite® Paprika?
Durabrite® Paprika is a highly stable form of oleoresin. Kalsec® uses selected raw materials and proprietary extraction techniques in combination
with a patented stabilization system. This produces an oleoresin that is
highly resistant to oxidative degradation.

3. When should I use Durabrite® Paprika?
Food products containing fats, oils and carotenoid pigments are subject to oxidative degradation. Exposure to oxygen, light, and heat initiates oxidation reactions which result in color loss and production of
off-flavors and aromas. Durabrite® Paprika can extend color life in
batters, breadings, crumbs, rusk, snack seasonings, and sauces.
4. What are the recommended handling procedures for storage and use of
paprika?
All Kalsec® Paprika extracts should be stored in tightly closed containers in cool, dry warehousing. Prior to use the containers should be stirred to ensure homogeneity.
5. Do you have colors with a more red or yellow hue?
If you require a more red hue than is typically achieved with paprika, we
generally recommend a blend of paprika and carmine. For a more yellow hue,
blends of paprika with annatto and turmeric are available.
6. Are Kalsec® Oleoresin, Aquaresin®, and Durabrite® Paprika Kosher?
Yes, they are Kosher.
7. Are GMO free (Genetically Modified Organisms) products available?
Yes. The spices, herbs, and vegetable materials extracted by Kalsec® have not been genetically modified. In addition, Kalsec® offers a range of extracts which use vegetable oil-based diluents and emulsifiers which are
certified "free of genetically-modified organisms."
8. How are Oleoresin and Aquaresin® Paprika labeled?
In the United States appropriate label declarations include Oleoresin Paprika, Extractives of Paprika, and Artificial Color. In EU countries paprika is labeled as "natural flavor" if the carotenoid content is less than 7%. If the content is greater than 7%, the extract must be labeled as E160c.
