MFD describes two undesirable changes in meat flavor quality. The first is the development of "off-flavors" brought about by oxidation. These "off flavors" are particularly evident after reheating and are usually described as "damp dog hair," "stale," or "cardboardy." The second change is the loss of desirable "meaty" flavors and aromas.
