Indian curry is over 5,000 years old, with the first 'modern' mention of curry in literature in A.D. 477. The term 'curry' is derived from the Tamil word 'kari,' meaning sauce.
Today, curry is but a single facet of a cuisine which combines flavors, textures, and pungency to produce dishes which adventurous diners find unique and exciting. Authentic Indian cuisine is one of the world's fastest growing ethnic food trends because of its diversity and unusual character. Each region of India has its own distinctive style of seasoning and food preparation. A common thread in all styles of Indian cookery is the use of marination and slow cooking to deliver the flavor and color of herbs and spices to meat, fish, poultry, and vegetables.
