Development began with our culinary staff identifying the gold standard by actually cooking using culinary techniques such as sautéed, caramelized and smoked. Then, our trained sensory panel evaluated each of the gold standards in order to isolate and define the distinct favor characteristics and balance.
Using the sensory analysis as a guide, our flavor chemists went to work creating a liquid prototype, building in the unique gold standard characteristics. Working closely with the sensory panel, our applications team began testing and evaluating each flavor in real world applications for the ideal performance against the gold standard. After many hours of collaboration between the various teams, the result is an optimized flavor that delivers the profile you expect in your finished food application.
