Anthocyanins are one of the most widely found pigments in nature. These pigments are responsible for the red, purple, and blue colors of many fruits, vegetables, cereal grains and flowers. Working with a variety of sources Kalsec has converted these natural raw materials into food colorings of the highest quality and consistent color strength.

Kalsec®'s anthocyanin based food colors are available in a range of hues including pink, red, reddish orange and purple.

Hues similar  to carmine and FD&C Red 40 can be achieved in many foods and beverages.

Light Stability

The light stability of anthocyanins will vary by application and pH. Very good stability is exhibited in confections and in products with protective packaging. Durabrite® formulations are recommended for sauces and beverages exposed to light.

pH Stability

Anthocyanin pigments undergo reversible structural transformations with a change in pH. Therefore, the pH of the food and beverage will effect the appearance of Kalsec® anthocyanin colors. Anthocyanin colors exhibit the best stability at pH 2.0-4.5 and are recommended for use in beverages and foods within this range.

Stability

Four Kalsec®  anthocyanin products were tested for stability under pasteurization in a beverage with a  pH of 3. They were tested relative to a competitors commercial black carrot color. The competitor product lost more than 40% of its strength through pasteurization. All Kalsec®  samples performed better than the competitor product; Durabrite Antho Red 4-1 outperformed all of the products tested and retained 20% more pigment through the process.

 

Heat Stability

Kalsec® anthocyanin colors were tested against a competitors black carrot, in a beverage base with a pH level of 3, and were held at 50oC for 5 hours.   All Kalsec® products out-performed the competitor product.  Durabrite® Antho Red 45-1 and Durabrite® Antho Red 54-1 were far superior indicating that beverages colored with these products will have a longer shelf life in storage.
