Annatto


How are Kalsec® Annatto colors produced?
Pigments are isolated from the surface of annatto seeds by abrasion in the presence of food grade solvents, oils, and emulsifiers. Pigments are further processed and combined with food grade emulsifiers and diluents designed for compatibility with specific food applications.

What is Durabrite® Annatto?
Durabrite® Annatto products are produced from select raw materials combined with careful processing and a patented stabilization system. This produces bixin that is highly resistant to oxidative degradation.

When should I use Durabrite® Annatto?
Food products containing fats, oils, and carotenoid pigments are subject to oxidative degradation. Exposure to oxygen, light, and heat initiates oxidation reactions which result in color loss and production of off-flavors and aromas. Durabrite® Annatto can extend color life of batters, breadings, crumbs, rusk, snack seasonings, and process cheeses.

What are the recommended handling procedures for storage and use of annatto?
All Kalsec® Annatto extracts should be stored in tightly closed containers. Micro-crystalline colors should be stored in cool, dry warehousing. Soluble colors such as acid proof, propylene glycol emulsions, and alkaline solutions should be stored under refrigeration. To ensure homogeneity, we recommend stirring prior to use.

Are Kalsec® Annatto products Kosher?
Yes, they are Kosher.

Are products free of GMOs (Genetically Modified Organisms) available?
Yes. The spices, herbs, and vegetable materials extracted by Kalsec® have not been genetically modified. In addition, Kalsec® offers a range of extracts which use vegetable oil-based diluents and emulsifiers which are certified "free of genetically modified organisms."

How are annatto colors labeled?
In the United States appropriate label declarations include Annatto Extract (Color), Extractives of Annatto (Color) and Artificial Color. In EU countries annatto is labeled as E160b.
