The only capsicum extract that's virtually colorless; free of chili pepper flavor; and completely soluble in water and brine. Literally, ClearCap® provides Nothing but heat because in some food applications, a little (or a lot) of heat is all you need.

Injection solutions and marinades:

  • Readily soluble in super chilled brine and pump solutions
  • Decolorization eliminates blotching and discoloration of poultry at injection needle entry points.

Pickles and Pickling Brines:

  • Clear pungent pickle brines without the use of polysorbates.
  • No “soapy” polysorbate aftertaste.

Hot Sauce, Steak Sauce and Flavored Soy Sauce:

  • Compensates for variability in chili pepper pungency.
  • Makes pungency differentiated line extensions simple to create and produce.
  • Completely soluble in high salt formulations.

Salsa:

  • Precisely standardizes heat levels to mild, medium, or hot from a single base formulation.

Heat Standardization in Brined Jalapenos:
