High Pungency and No Color
Dosage rates as high as 750 Scoville Heat Units (0.15% ClearCap® 500,000 Scoville extract) impart virtually no color to food. Brine solutions, as pictured below, can range from clear to slightly turbid at 750 Scoville Heat Units.



Don’t be fooled by "decolorized" imitations
The jars pictured below contain 0.15% of ClearCap® 500,000 Scoville extract (left) and 0.15% of a ‘so-called’ decolorized 500,000 Scoville oleoresin capsicum that has been solubilized with polysorbate 80.



Clear Pickling Brines and Complete Utilzation of Pungency
Pickling brines that are initially cloudy will clear as pungency migrates from the brine into the pickled food item. Note the slight cloud in the jar on the left (below) which clears within 24-48 hours. Although the brine in both jars initially contained the same amount of ClearCap®, the pickles in the jar on the right are now seven times hotter than the pickles in the jar on the left.


Complete Solubility Eliminates "Ringing Out"
ClearCap® Super Soluble Capsicum is entirely water and brine soluble. "Ringing Out" problems as seen in the jar on the right (below) are completely eliminated when you use ClearCap® Super Soluble Capsicum.



Simplified Labeling
Super Soluble Capsicum, when used with other Kalsec® polysorbate free pickling spices, may be labeled as natural flavoring.



Distinctively different pungency expression
The graph below depicts and compares the pungency expression of ClearCap® and oleoresin capsicum. ClearCap® pungency comes on fast and subsides promptly for clean heat that doesn’t linger on the palate. On the other hand, oleoresin capsicum pungency builds slowly, lingers and then fades slowly.
