Carrot is the root of Daucas carota L. Kalsec oleoresin is produced from carrot cultivated in southwestern United States.
The color value of carrot oleoresin in measured by spectrophotometric absorbance at 450 nm in hexane. The color is reported as % total alpha and beta carotene based on E 1%/1cm of 2500 for pure pigment. The food industry also uses a Color Value (CV) which compares to these numbers as follows:
