The numbers listed in the Scoville Heat Units columns (mild and hot) are suggested guidelines for each product application. By employing the formula provided in the Choosing the Right Tool for the Job section, you can calculate the dosage rates needed to produce mild to hot versions of your food product. Please keep in mind that mild and hot are relative terms. For example, a mild hot sauce would be more pungent than a hot snack. For food products which do not typically use capsicum as a seasoning, we have provided a "starting scoville pungency." If you wish to "heat up" your special version of this food item, the "starting scoville" number provides an appropriate starting point for your development work.
