1. What is the difference between Oleoresin and Aquaresin®?
The primary difference between Oleoresin and Aquaresin®
black and white pepper is dispersibility. Aquaresins® are
dispersible in both water and oil. Oleoresins are dispersible

2. Will your product taste like ground
black pepper in our product?
Kalsec®: black and white pepper Oleoresins and Aquaresins®
are formulated to replicate the same proportions of
pungency and aroma which occur in good quality ground
black pepper. The expression of flavor and pungency will
depend upon your food product, processing conditions,
and the grind profile of the pepper currently being used.
3. What black and white pepper
components do you standardize?
Kalsec® standardizes for both pungency (as determined by
piperine content) and flavor profile (as determined by
quantity and quality of flavor components in volatile and
nonvolatile fractions). Although Kalsec® black pepper
extracts are comparatively low in color, we do not
standardize for this characteristic.
4. What is the shelf life of your products?
Kalsec® Oleoresin and Aquaresin® black and white pepper
have a minimum shelf life of one year when stored at
ambient temperature and in their unopened container.
5. How do I add Kalsec® Oleoresins and
Aquaresins® to my food product?
Oleoresins and Aquaresins®: may be added after dispersing
onto other dry ingredients such as salt, dextrose, flour, or
sugar. Aquaresins® may be added by way of predispersing
into aqueous ingredients such as water, brine, phosphate

6. Are these products Kosher?
All Kalsec® black and white pepper Oleoresins and

7. What is the difference between black
and white pepper?
Although black and white pepper come from the same
botanical source, they are distinctly different in flavor and
